Potato Chips in Japan

Asia

Japan's chip story starts with seaweed, not salt. In August 1962 Koikeya launched Koikeya Potato Chips Nori Shio, deliberately seasoned with a flavour Japanese snackers already knew, and in 1967 the company became the first in Japan to mass-produce potato chips. Koikeya also pioneered contract potato farming in Hokkaido to secure its supply. Calbee arrived later but went on to dominate: founder Takashi Matsuo saw chips piled high in American shops in 1967, and in 1975 Calbee launched Potato Chips Usushio (lightly salted), followed by Norishio in 1976 and Consommé Punch in 1978 — three flavours that remain the backbone of the category today. In 1983 the thick, crinkle-cut Potato Chips Louisiana arrived, and in 1984 Koikeya answered with Karamucho, a chilli-seasoned chip that helped make spicy snacks mainstream. What sets Japan apart is constant rotation: Calbee says it always has more than 50 potato chip varieties on sale and releases around 100 flavours a year once limited-time, limited-quantity and regional editions are counted. That churn is why shoppers keep checking konbini shelves at 7-Eleven, Lawson and FamilyMart, as well as supermarkets and station kiosks, for whatever is new this season.
