How Potato Scraps Become Perfectly Stackable Chips

Stackable chips like Pringles are made from dough rather than whole slices, which lets processors use undersized potatoes and the offcuts left over from fry production. As Tummers Food Processing Solutions explains, the scraps are pureed, drum-dried into flakes, milled into powder and mixed into a dough that is sheeted, stamped and fried, while potato water, peels and residual heat can be recovered too.
